2 cups cauliflower, chopped
1 cup broccoli, chopped
3 garlic cloves, finely chopped
1 tbsp olive oil
2 eggs Spices:
½ tsp salt
¼ tsp black pepper, ground
¼ tsp red pepper flakes
¼ tsp onion powder
1.Plug in the instant pot and grease the stainless steel insert with olive oil. Press the ”Saute” button and add garlic.
2.Stir-fry for 2 minutes and add cauliflower and broccoli. Sprinkle with salt, pepper, red pepper flakes, and onion powder. Stir and cook for 5 minutes.
3.Now, add about ¼ cup of water and cook for 5 more minutes, stirring occasionally.
4.Poach the egg on top and season with some more salt. Cook for 2-3 minutes more and turn off the pot.
5.Using a large spatula, transfer all to a serving plate.
6.Optionally, top with sour cream or some Greek yogurt.
