Green Veggie Salad

1 cup green beans, steamed lightly

1 cup broccoli florets, steamed lightly

1 small tomato, finely sliced

1 cup lettuce

1 round feta

¼ cup toasted sunflower seeds, roasted

1 hard-boiled egg, chopped

For dressing:

1 tbsp olive oil Salt and pepper to taste

½ lemon juice

  1. Place all the vegetables in a salad bowl.
  2. Crumble the feta and sprinkle it along with the roasted pumpkin seeds and egg on top of the salad.
  3. In a small bowl, pour the olive oil, add lemon juice, then add salt and pepper, and whisk together. Drizzle this dressing on top of the salad.
  4. Toss gently before serving.
