1 cup green beans, steamed lightly
1 cup broccoli florets, steamed lightly
1 small tomato, finely sliced
1 cup lettuce
1 round feta
¼ cup toasted sunflower seeds, roasted
1 hard-boiled egg, chopped
1 tbsp olive oil Salt and pepper to taste
½ lemon juice
- Place all the vegetables in a salad bowl.
- Crumble the feta and sprinkle it along with the roasted pumpkin seeds and egg on top of the salad.
- In a small bowl, pour the olive oil, add lemon juice, then add salt and pepper, and whisk together. Drizzle this dressing on top of the salad.
- Toss gently before serving.
