Breakfast Tacos

Ingredients:

3 strips bacon

1 cup mozzarella cheese, shredded

2 tbsp butter 6 eggs Salt and pepper

½ avocado, cubed

1 oz cheddar cheese, shredded

 

Directions:

Cook bacon until crisp, put aside until needed.

Heat a non-stick pan and place 1/3 cup mozzarella into the pan and cook for 3 minutes until browned around the edges. Place a wooden spoon in a bowl or pot and use tongs to lift cheese ‘taco from the pot. Repeat with leftover cheese.

Melt butter in a skillet and scramble eggs; use pepper and salt to season.

Spoon eggs into hardened shells and top with avocado and bacon.

Top with cheddar and serve.
