Breakfast Quiche


 (Total Time: 30 MIN| Serve: 2)


3 tbsp coconut oil 5 eggs

8 slices bacon, cooked and chopped ½ cup heavy cream

2 cups baby spinach

1 cup red pepper, diced

1 cup yellow onion

2 cloves of garlic, chopped

1 cup mushrooms, chopped

1 cup cheddar cheese, grated Salt


1.Preheat oven to 375 F.

2.In a large bowl, mix all vegetables including the mushrooms together.

3.In another small bowl, whisk the 5 eggs with the cream

4.Carefully scoop the veggie mixture into a muffin pan coated with cooking spray, top

with egg and cheese filling up to ¾ of the muffin tins. Sprinkle with chopped bacon             on top.

5.Place in the oven to bake for 15 minutes or until the top of the quiche are firm.

6.Let it cool for a few minutes before serving.
